Deep-Dish Vegetable Quiche

1 tbsp. Oil
1 onion (cut in slices)
1 garlic- minced
1 pkg. 6 oz. Spinach
salt & pepper
1 sheet refrigerated pie crust (9 inches)
1 jar (12 oz.) Roasted pepper (drained)
1 jar (6 oz.) Mushroom (drained)
1 8 oz. Pkg. Sharp cheese-shredded (or any kind you like)
3 brown eggs
1 cup milk
Preheat oven 375 degrees; Sautee over medium heat, oil, onion & garlic, cook 3 min. until soft.
Add spinach, salt & pepper, until wilted.
Squeeze out excess liquid.
Coat 9- inch spring form pan with spray. Fit dough into pan.
Spread ½ of veggies on bottom , layer with cheese. Repeat layers ending w/cheese.
Beat eggs, milk, and pour over cheese. Bake 50 min. or until set. Cool on rack for 20 min.
Southwestern Quiche recipe

3 10 inch flour tortillas
1 large onion, small dice
1 Tablespoon garlic minced
1 hot Italian sausage with casing removed
1 chipotle pepper
¼ cup black beans
8 oz. Monterey jack cheese
4 eggs
½ cup half-and-half
1 Tablespoon fresh cilantro
1 Tablespoon salt and 1 Tablespoon pepper
Heat oven to 375 degrees F.
Place 1 tortilla in an 8- or 9-inch pie pan brushing egg on top and repeat with remaining two tortillas.
Saute onion, garlic, and sausage in frying pan with oil.
Cool in refrigerator. Beat eggs with half and half.
Add onion, sausage mix, black beans, chipotle pepper, cheese, cilantro, and salt & pepper.
Pour into tortilla crust.
Bake 50 minutes or until lightly brown on top.
Makes 6-8 servings.
